Pork Chops & Potato Au Gratin

Don't @ me if this is not a true au gratin.
4-6 small (boneless) pork chops
2 cans sliced or diced canned potatoes (or equivalent fresh, but make them thin/small)
1 cup milk
at least 1 cup cheese
random amount of flour of choice beginning with 2 tbsps
glob of bacon grease or oil or butter
Melt the glob of grease/heat the oil/liquefy the butter in the bottom of a medium pot. Add a little flour, whisk it, add a little milk, whisk it, add flour if that thinned it too much, whisk it, add milk bit by bit whisking it as you do, add cheese and whisk til one damn fine cheese sauce. Set to side and check on pork
In between whiskings, heat a skillet. Throw pork chops (boneless best) in. Flip when able between whiskings. You don't want to brown them, but you don't want them still raw in the middle. So basically when they are half-done, that's the point you need. This is a good time to turn the oven to 350.
Spray the hell out of a pyrex casserole dish (used the medium sized one). Lay the chops in along the bottom. Goal is to cover bottom, but not have chops lying on each other. If you want any seasoning (season salt? YES) you want to sprinkle it on either the pork chops or the potatoes or both. Layer the potatoes over the pork chops (add that flavor if you wanna again/now). Pour your cheese sauce over the whole.
Stick in oven and let it talk to itself for an hour. Can pull it with 10 minutes to go and sprinkle bacon or crushed crackers or crushed chips or crushed corn flakes on top if you want for the Cronch.
Served four with 2 portions left over for lunches!
