Not Your Typical Pepper Steak
Ingredients
1 pack of thin breakfast steaks
4 pieces of bacon
1 small pack of mushrooms
1 yellow bell pepper
1 half a large purple onion
Penzey's Forward seasoning
Spice Lab's Espresso salt
Cooking sherry
Olive oil
Four pieces (toaster size) naan
Fontina shreds
Core, de-seed, and slice the pepper into strips. Place in a bowl of water and stick back in the fridge.
Wash the mushrooms. In a small mixing bowl, pour about 3 tbsps of sherry, 1 tbsp of olive oil, and cover the top of the liquid with the espresso salt. mix that a bit, then dump the shrooms back on top. Cover bowl tightly, and shake it like it owes you money. Stick in fridge to have a stern talking to itself.
Dice the onion. Start a skillet on med-low heat, and cut the bacon into roughly half-inch sections into it. Stir until there's a little grease visible, then toss the onions in there. Mix well and let them sizzle while you move to the beef.
Cut the breakfast steaks up into thin strips about an inch in length, 1/2 inch or less in width. Once you have it all cut up, toss into the bacon and onions, mix well. Shake the Forward over it like you want to spread glitter over the world.
Dollop of olive oil in another skillet, small, and get the chastened mushrooms out of the fridge. Dump in the oil when it's hot, and just stir them around occasionally.
Bring those pepper strips back out when the beef is mostly heated, no pink showing. Drain the strips, and dump your bacon/beef/onion into the bowl you had the shrooms in. Single layer of strips on the bottom of the now empty skillet, then dump the mixture back on top. DON'T stir at first. Give it a few minutes, til you hear the peppers crying about the heat, then you can stir it all up.
Turn the heat on both skillets to high to cook off a little liquid while you do the next step.
Heat your naan with moist paper towels around them in the microwave for 15-30 seconds.
Everything should be heated through by now. Take a piece of naan, layer the shrooms and the meat/onion/pepper mix on a piece. Put the fontina on top, and serve.
Covered all four naan pieces, and left enough that I can make rice to add and have two lunches for us.
