Hurst Hambeens 15 bean soup (not the cajun)
One can of diced tomatoes
About 2 tbsps lemon juice
Salt back, ham seasoning pieces, or other salty pork
Onion to taste (I used a half, diced)
32 ounce chicken broth
Enough water to make sure the beans have enough liquid for simmering.

Soak the beans overnight in water with a bit of baking soda in it.

Depending on what kind of pork you use, you may want to sizzle it a little bit as first step when assembling. I did because of using salt back this time.

Drain your beans, don't rinse.

Put the pork in your pot, add the onions and tomatoes. Add the beans. Add all the liquids (I try for at least a full inch above the level of the beans.) Add the seasoning packet from the 15 bean soup.

If using a stove top pot, bring to boil, let boil about 5 minutes, then cut the heat and leave to simmer for at least 5 hours or until beans are soft.

If using a slow cooker, cook on high half the time, low the rest. Minimum 6 hours here.

Serve with cornbread or corn muffins (the only time I make Jiffy Corn muffins)
