Beef and Sweet Potatoes Teriyaki

2 beef boneless ribs
Cubed Sweet potato
1/2 a large onion
Teriyaki sauce
Cut the beef into 1/4 inch by 2 inch strips (roughly, you want thin, small bites but not so thin as to dry out fast). Chop onion to you-friendly pieces. Mix in glass bowl, coat well with teriyaki sauce, let marinate for 1/2 an hour.
Turn oven to 350 F.
Layer enough sweet potato cubes to cover the bottom of a 13x9 pyrex casserole dish. Pour mixture of beef and onion over and try to cover the potatoes evenly. (Sweet potato Puffs -- the tater tot kind -- would work if you can't get pre-cubed).
Cook covered by foil for around an hour, checking the sweet potato for softness to tell if done.
Serve.

Bastardized Pork Chop Bake

One large pork chop/steak or 2 smaller ones
One can diced potatoes
One can cream of mushroom soup
Swiss cheese
Penzey's Venison Sausage Blend
Fried onions
Set oven to 350. Put thawed pork chop in bottom of casserole dish (medium sized one). In a bowl, plop the condensed soup, the drained can of potatoes, about 3 heaping teaspoons of the seasoning, and the cheese (shredded or cut in small pieces). Mix well. Put the mixture over top of the pork, stick in oven for 45 minutes.
Top with fried onions (these were the black pepper and garlic flavored ones), cook for 15 minutes more.
Serve.
(Extra potato mix is now lunch with bacon crumbles, as there was no pork chop left at dinner.)

Sweet Potato Casserole

1 bag Alexia Sweet Potato Puffs
Honey
Nutmeg
Cinnamon
Pecans
Brown Sugar
Start with 1 bag Alexia Sweet Potato Puffs (still frozen). Lay in a well greased medium pyrex pan. Take honey (I used clover honey) and drizzle so that each puff has some honey. Take Nutmeg, and then Cinnamon to the pan. Give all the pieces a dusting to taste. I admit, the puffs were fairly brown when I finished. Sprinkle pecan bits over the whole, then sprinkle brown sugar to taste (I used maybe 2-3 tablespoons of pecans and a quarter cup of brown sugar. Don't ask how much honey or spices)
I did prep before anyone else started cooking, so it had about 2 hours sitting in the fridge covered so the flavors mingled. Baked for 25 minutes on 375... and was told it was tasty. I loved it.

2 cups chicken broth
4 eggs, lightly beaten
2 celery ribs, chopped
4 Tbsp. finely chopped onion
1/2 tsp. salt
1/2 tsp poultry seasoning (or the equivalent amount, mixed, of: rosemary, thyme, hyssop, marjoram, and pepper, as I detest sage)
3 cups cubed cooked chicken
1 cup cooked rice
(1 4oz jar pimentos or, as I hate the things as much as I hate sage, enough red pepper and paprika as you feel like eating)
1/3 cup butter
1 cup sliced fresh mushrooms
3 Tbsp. all-purpose flour
1/2 tsp. salt
1/4 tsp. pepper
1-1/2 cups milk
Mix bread, eggs, broth, eggs, onion, salt, seasonings. Add in chicken and rice. Pour into 8 inch square baking pan, cook at 350 for 55-65 minutes or until bubbly and golden.
About halfway through that hour of cooking, in saucepan, mix butter and mushrooms, saute for a little while. (I did about 6 minutes, medium high, the recipe gave no such directions.) Stir in flour, salt, pepper. Gradually add milk. Bring to boil, cook and stir for two minutes or until thickened. Take off heat, wait for casserole to come out of oven. Cut, top with mushroom sauce, serve.Collapse
